Chile con Queso

Serve with: Corn chips, tortillas or sliced raw veggies

 

Ingredients:

2 teaspoons vegetable oil

Cooking spray

1 large yellow onion, diced

1 red bell pepper, seeded and diced

1 large jalapeno, diced

3 cloves garlic, minced

1 pound ground beef

3 tablespoons chili powder

1 teaspoon white pepper

1 teaspoon garlic powder

1 teaspoon onion powder

32 ounce package Velveeta, cubed

10-ounce can no salt added, Rotel diced tomatoes & green chilies

1 4-6 ounce can diced green chiles

1 8 ounce block of cream cheese, cubed

1 bunch scallion, sliced

3 Tablespoon fresh cilantro, chopped

 

Add vegetable oil to medium sized skillet on medium heat. Brown hamburger. Drain.

 

Add hamburger back to skillet with onion, bell pepper, jalapeno, garlic and all spices

until veggies are soft.

 

Meanwhile, spray medium to large sized crockpot with oil. Turn on medium low. Add

meat mixture, Rotel, chiles and 1/4 of the Velveeta cubes. Add more Velveeta cubes

gradually when melted. Add cream cheese and allow it to melt. Add scallion and cilantro

5 minutes before serving.

 

Other uses and variations:

Add 1 can black beans, drained

Substitute and/or combine hamburger with/for Italian or pork sausage

Fry flour tortillas in oil

Pour over enchiladas

Use it in nachos

Use for tacos or taco salad
